  • 3 medium zucchinis
  • 2 egg whites (mixed with 1 teaspoon Cajun seasoning)
  • 1 cup Parmesan cheese (mixed with 1 tablespoon Cajun seasoning)
  • Dipping sauce: 1/2 cup mayo
  • 2 tablespoons heavy cream
  • 2 tablespoons lemon juice
  • 1 tablespoon Cajun seasoning
  • 2 beaten egg yolks

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and slice zucchinis into thin strips (¼ inch wide).
  3. In a bowl, mix egg whites and Cajun seasoning; in another bowl, combine Parmesan cheese with Cajun seasoning.
  4. Dip zucchini strips in the egg white mixture, then roll in the Parmesan mixture.
  5. Place coated strips on a parchment-lined baking sheet and bake for about 30 minutes until golden brown.
  6. While baking, prepare the dipping sauce by mixing mayo, heavy cream, lemon juice, Cajun seasoning, and egg yolks until smooth.
