  • 2 eggs
  • 1/2 tsp vanilla extract
  • 3/4 cup whole milk
  • 1/2 cup water
  • 3 tbsp unsalted butter (melted)
  • 1/2 cup castor sugar
  • 1/2 cup unsalted butter
  • Thinly sliced orange peel
  • 3/4 cup orange juice

Instructions

  1. In a mixing bowl, whisk together flour, sugar, and salt. Add eggs, vanilla extract, milk, and water; mix until smooth. Stir in melted butter and let rest for 30 minutes.
  2. Heat a non-stick skillet over medium heat and lightly grease it. Pour about 1/4 cup of batter into the skillet, swirling to coat evenly. Cook for 1-2 minutes until edges lift; flip and cook for another minute. Repeat with remaining batter.
  3. For the sauce, melt butter in a saucepan over medium heat; add sugar until dissolved. Stir in orange peel and juice; simmer until slightly thickened.
  4. Fold each crepe into quarters and immerse them in the sauce briefly before serving warm.
