  • 1/2 cup fresh squeezed orange juice
  • 1/4 cup fresh squeezed lemon juice
  • 1 tablespoon almond milk
  • 4 slices pineapple
  • 1 avocado, sliced
  • 1 corn on the cob
  • 23 cups fresh mixed greens
  • 3/4 cup olive oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon minced shallots
  • pinch of salt
  • 1/2 cup pepitas

Instructions

  1. For the dressing: Combine orange juice, lemon juice, almond milk, parsley, olive oil, rice vinegar, shallots, and salt in a mason jar. Blend until smooth using an immersion blender.
  2. Preheat your grill to medium-high heat and clean grates with a grill brush.
  3. Brush pineapple slices with olive oil and grill for about 2 minutes on each side until caramelized. Grill corn for about 5 minutes per side until charred.
  4. Assemble the salad by adding mixed greens to bowls. Top with grilled pineapple slices, corn kernels (cut off the cob), avocado slices, and pepitas.
