  • pounds boneless skinless chicken breasts
  • 1 pound asparagus
  • ¼ cup onion
  • 8 ounces mushrooms
  • ½ cup chicken broth
  • ¾ cup heavy cream
  • ¼ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1½ cups shredded gouda or Swiss cheese
  • ½ cup shredded parmesan cheese
  • 4 tablespoons butter

Instructions

  1. Preheat your oven to 375°F.
  2. Steam asparagus until tender, about 3 minutes; drain and set aside.
  3. In a skillet, melt butter over medium-high heat, add chicken, and cook until browned, around 6–8 minutes total.
  4. Remove chicken to a greased casserole dish and top with asparagus.
  5. Sauté onions and mushrooms in the same skillet until tender.
  6. Add chicken broth, heavy cream, seasonings, mayonnaise, Dijon mustard, and lemon juice; whisk and simmer until slightly thickened.
  7. Pour sauce over chicken and asparagus; mix in gouda or Swiss cheese.
  8. Top with remaining cheeses and bake for about 30 minutes or until bubbly.
