  • 4 ounces bittersweet chocolate (chopped)
  • 2 ounces semi-sweet chocolate (chopped)
  • ⅓ cup heavy cream
  • 4 ounces Biscoff cookies (broken into ¾-inch chunks)
  • ⅛ teaspoon kosher salt
  • ½ cup pistachios (toasted)
  • ½ cup confectioners' sugar

Instructions

  1. Soak ½ cup dried cranberries in a small bowl by microwaving them until hot (about 30 seconds). Let sit for 15 minutes to soften.
  2. In a medium bowl, melt 4 ounces bittersweet chocolate, 2 ounces semi-sweet chocolate, and ⅓ cup heavy cream in the microwave at 50% power for 30 seconds. Stir until smooth.
  3. Mix in 4 ounces crushed Biscoff cookies and ⅛ teaspoon kosher salt, followed by the cranberry mixture and ½ cup toasted pistachios.
  4. Divide the mixture onto two sheets of parchment paper and shape into tight logs about 6 inches long. Chill in the refrigerator for at least three hours.
  5. Once firm, unroll from parchment paper, dust with confectioners' sugar, slice into half-inch pieces, and serve.
