  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar (divided)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 cup melted dark chocolate, cooled
  • 1 cup fresh strawberries, pureed
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine chocolate cookie crumbs, melted butter, and half the sugar in a bowl. Press into the bottom of a springform pan.
  3. Bake the crust for 10 minutes; let cool.
  4. In a separate bowl, beat cream cheese until smooth. Gradually add remaining sugar, eggs, vanilla extract, sour cream, and melted dark chocolate.
  5. Mix strawberry puree with lemon juice in another bowl.
  6. Pour the chocolate mixture over the crust and dollop strawberry puree on top. Swirl gently with a knife to create marbling.
  7. Bake for 50–60 minutes until edges are set but center jiggles slightly. Cool in the oven for an hour before refrigerating for at least four hours or overnight.
