  • 2 heads cauliflower (about 700g)
  • 1.5 cups low carb pulled beef
  • 2 small tomatoes, chopped
  • 1 medium green bell pepper, chopped
  • 2 green chilies or jalapeños, sliced
  • 2 tsp low carb taco seasoning
  • ½ cup Parmesan cheese
  • 1 cup freshly grated mozzarella cheese
  • Olive oil (2 to 3 tbsp)
  • Salt and ground black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly grease it.
  2. Spread cauliflower florets on the baking sheet and brush with olive oil. Season with taco seasoning, salt, and pepper.
  3. Roast cauliflower for about 5 to 7 minutes until slightly tender.
  4. Remove from oven and top each floret with pulled beef, tomatoes, bell pepper, Parmesan, mozzarella cheese, and chilies.
  5. Return to the oven and bake for an additional 10 to 12 minutes until cheese is melted and bubbly.
