  • 1 pound ground beef
  • 5 cups chopped green cabbage
  • 5 cups beef stock
  • 1 cup riced cauliflower
  • 1/2 cup diced carrots
  • 1.5 teaspoons table salt
  • 1 teaspoon dried oregano
  • 1 teaspoon ground thyme
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a large pot over medium-high heat, brown the ground beef with diced carrots for about 5 minutes until fully cooked.
  2. Add the diced tomatoes (with juice), chopped cabbage, beef stock, riced cauliflower, salt, oregano, and thyme to the pot. Stir well to combine.
  3. Increase heat until the mixture simmers. Then cover and reduce heat to medium-low; simmer for about 30 minutes until cabbage is tender.
  4. Serve hot garnished with fresh parsley.
