  • 1 1/2 heaping cups julienned carrots
  • 1 cup vegan cheddar cheese
  • Salt and pepper to taste

  2. Sauté chopped onions and diced garlic for 5–7 minutes until soft.
  3. Gradually stir in the flour to create a smooth roux.
  4. Whisk in vegetable broth and rice milk until combined; bring to a boil.
  5. Add broccoli and carrots; cook for about 10 minutes until tender.
  6. Stir in vegan cheddar cheese until melted.
  7. Blend about 1/4 of the soup in a high-speed blender until creamy; mix back into the pot.
  8. Season with salt and pepper as desired; serve hot.
