  • 1 teaspoon black pepper
  • 3 tablespoons olive oil
  • 2 medium yellow onions
  • 7 cloves garlic
  • 2 tablespoons balsamic vinegar
  • 1½ tablespoons tomato concentrate
  • 1/4 cup plain flour
  • 2 cups red apple vinegar
  • 2 cups beef stock
  • 2 cups water
  • 1 bay leaf
  • 1/2 teaspoon thyme
  • 1½ teaspoons sugar
  • 4 large carrots
  • 1 pound small white potatoes
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Gather and prep all ingredients: chop onions, crush garlic, slice carrots, and halve potatoes.
  2. In a Dutch oven over medium-high heat, add olive oil. Season the beef with salt and black pepper then brown in batches for about 5 minutes per batch. Remove and set aside.
  3. Sauté onions in the same pot until translucent (about 5 minutes), then add garlic and cook for another minute.
  4. Stir in balsamic vinegar and tomato concentrate; sprinkle flour over the mixture and cook for 2 minutes.
  5. Return browned beef to the pot, pour in red apple vinegar, beef stock, water, bay leaf, thyme, and sugar. Bring to a simmer.
  6. Add carrots and potatoes; cover tightly and let simmer gently for about 3 hours or until meat is tender.
  7. Remove bay leaf before serving; garnish with chopped parsley if desired.
