  • 1 red bell pepper, diced
  • 1/2 small red onion, diced
  • 3 cloves minced garlic
  • 8 ounces feta cheese
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes
  • 1 cup chopped baby spinach
  • 4 large eggs
  • Optional: chopped fresh basil or fresh chives

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In an oven-safe baking dish or individual ramekins, arrange cherry tomatoes, diced red bell pepper, red onion, minced garlic, and crumbled feta cheese. Drizzle with olive oil.
  3. In a small bowl, mix dried oregano, sea salt, dried thyme, black pepper, and red pepper flakes. Sprinkle over the vegetable mixture.
  4. Bake for 25 minutes until vegetables are tender.
  5. Stir in chopped spinach and make wells in the mixture; crack an egg into each well.
  6. Return to the oven and bake for an additional 10 minutes, until eggs are set but still slightly runny.
  7. Serve hot with optional fresh herbs on top.
