Apple Snickerdoodles are a scrumptious take on the classic cookie, featuring the delightful combination of sweet apples and warm cinnamon. Soft and chewy, these cookies are packed with fresh apple chunks, making them perfect for fall gatherings or cozy nights in.

  • 1 cup (130 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon fine salt
  • ½ cup (113 g) unsalted butter, at room temperature
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled and finely chopped
  • ¼ cup (50 g) granulated sugar (for rolling)
  • 1 teaspoon ground cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cream of tartar, ground cinnamon, and fine salt.
  3. In a large bowl, beat together the unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the large egg and vanilla extract to the butter mixture; mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Gently fold in the finely chopped apple until evenly distributed in the dough.
  7. In a small bowl, mix together granulated sugar and ground cinnamon for rolling.
  8. Shape tablespoon-sized portions of dough into balls and roll each in the cinnamon-sugar mixture.
  9. Place on the prepared baking sheet, spacing 2 inches apart. Bake for 8–10 minutes or until edges are golden while centers remain soft.
  10. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
