  • 1 pound boneless skinless chicken breast
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon maple syrup
  • 1 medium head of broccoli
  • Kosher salt and pepper

Instructions

  1. Prepare the marinade by mixing olive oil, balsamic vinegar, maple syrup, Italian seasoning, onion powder, garlic powder, smoked paprika, salt, and pepper in a mixing bowl.
  2. Cut chicken into 1-inch pieces and marinate for at least 15 minutes.
  3. While marinating, cut broccoli into florets and toss with olive oil, salt, and pepper.
  4. Preheat the air fryer to 380ºF (193ºC).
  5. Air fry chicken for 10–12 minutes until cooked through.
  6. Add broccoli to the air fryer basket and cook alongside the chicken for an additional 6–8 minutes.
  7. Serve over rice garnished with chopped parsley.
